Green Giant Prize Pack Giveaway from My Blog Spark...

Whew...what an eventful 24 hours we've had in San Antonio. The weather forecasters predicted a dusting of snow overnight, but we've heard that before and then had our hopes dashed in the end. But not this time...Mother Nature surprised us with some snow AND ice last night. This is a very rare occurrence in Texas, so to say we're not equipped to deal with it is an understatement. The roadways in the entire county were shut down from midnight until noon, so we received another very rare happening: a snow day from work!

Exactly how much snow does it take to shut down this city? Not much, especially when there's a layer of ice underneath. Here's what the parking lot of my apartment complex looked like when I woke up this morning...sort of like a coating of powdered sugar:

Before the weather turned nasty yesterday, I received a very cool Green Giant prize pack from the nice people at My Blog Spark. It contained a large insulated green tote bag, a box of Green Giant frozen broccoli with cheese sauce, a very nice serving bowl and matching silicone serving spoon, and a clip-on pedometer to measure my steps walked each day.

I'm a big fan of Green Giant frozen veggies, and their broccoli and cheese sauce happens to be one of my favorite varieties! Although it makes a tasty side on its own, I love to use it to top a baked potato topping for a quick and simple lunch or dinner. I simply microwave a baked potato and pour the cheesy broccoli on top. You can't ask for more than that: something that's yummy, quick to make, and full of healthy fiber to boot.

Even better? My Blog Spark is offering one of you a chance to receive the same prize pack!! The only difference is that your prize pack will come with a coupon for a free box of Green Giant frozen veggies instead of an actual frozen box of veggies. To enter, simply leave me a comment telling me your favorite vegetable AND your favorite way to prepare it. Don't forget to leave your e-mail as well so I can contact you if you're the winner. I'm always looking for simple and creative ways to incorporate more veggies into our meals. The contest will be open for entries until 11:59 p.m. on Wednesday, February 9th. The winner will be announced next Thursday.

I hope y'all have a wonderful weekend. Now that the snow and ice are mostly melted, we're heading to Houston overnight tomorrow to celebrate my mother-in-law's birthday tomorrow afternoon. Who are you rooting for in the Super Bowl? I was an Oilers fan back in the day, and the Steelers were our hated nemesis. Old habits die hard, so we're pulling for the Packers this year!!

A delish combo of beaten eggs, grated cheddar cheese, a tad of sugar, whole kernel corn and yummy bacon ... all this in a 9 x 13 Pyrex in the oven ... it's so good! I'll send you the recipe if you want it. :)
