We sipped each flavor, either cold or hot...and I even experimented with it in the kitchen. Just wait until you see the amazing mousse I made with the Lime Blossom flavor! But first, I want to tell you about some of the health benefits of matcha. It has 2x the antioxidants of red wine, 15x the antioxidants of blueberries, and 137x the antioxidants of non-matcha green teas. Yep...it's an antioxidant machine flavored with natural ingredients and sweetened with a small amount of organic evaporated cane juice. Each packet is only 20 calories, and it will give you a great energy boost. I love to drink it when I get up in the morning to increase my alertness. I played around with some of the packets, making smoothies and shakes. Then, I had the idea to create a tangy and not-too-sweet dessert. What I came up with was Matcha-Key Lime Yogurt Mousse. All this mousse takes is a few simple ingredients that come together in about five minutes.
This mousse reminded me of key lime pie filling, but without any guilt thanks to a base of fat-free Greek yogurt and Jade Monk matcha in every bite! You could even eat this versatile mousse for breakfast or an after-work snack to tide you over until dinner.
Matcha-Key Lime Yogurt Mousse

Step 1: Add the following ingredients to a mixing bowl: 2 8-ounce cups fat-free lime Greek yogurt, 1 packet Jade Monk Lime Blossom instant matcha, 1/2 cup whipped cream, the juice from two small key limes (or half a regular lime), and 1 tsp. vanilla bean paste (or vanilla extract). NOTE: I bought an all-natural aerosol whipped cream at Whole Foods to save time, but you could also whip 1/4 cup cream and 1 tbs. sugar with a mixer until it doubles in volume.
Step 2: Combine the ingredients until everything is evenly incorporated. A rubber spatula works perfectly for this. Spoon the mousse into four small bowls. Just before serving, top each serving with a bit more of the whipped cream and grated lime zest.
This mousse was really good...not too sweet, with a pronounced lime flavor. I like my citrus desserts to be pucker-up tart, and the level of tartness here was perfect! The mousse was light and fluffy, and the matcha flavor was like a whisper in the background. I can definitely see myself making this again and spooning it into mini graham cracker tart shells for a healthy, portion-controlled dessert.
