Watermelon-Feta Salad with Pomegranate Drizzle...Farmers Market/Local Food #SundaySupper

This week, #SundaySupper is focused on local and farmers market items. Our host, T.R. Crumbley from No One Likes Crumbley Cookies challenged us to select a locally sourced item or a farmers market item and showcase the item in a Summer recipe. Here in Texas, we're known for our juicy and sweet watermelons...so I knew that was going to be my key ingredient. Here in San Antonio, the largest weekend farmers market is the Pearl Farmers Market at The Pearl Brewery complex. I headed there in search of a watermelon to make my Watermelon-Feta Salad with Pomegranate Drizzle.


I found several versions of watermelon-feta salad online, so I tweaked them and made a couple of changes. I opted to add a bit of basil and finely chopped shallot to the watermelon-feta combo, and I drizzled a sweet-tart pomegranate reduction over the top just before serving. This is an ideal Summer salad...refreshing and unique!

Watermelon-Feta Salad with Pomegranate Drizzle

Ingredients:
  1. 4 cups diced seedless watermelon
  2. 1 cup crumbled feta cheese
  3. 2-3 basil leaves, cut in a chiffonade
  4. 1 tbs. finely diced shallot
  5. 1 8-ounce bottle pomegranate juice
Directions:
  1. Place the pomegranate juice in a small non-stick saute pan over med-high heat. Bring to a rolling boil and cook until the mixture is reduced to 1/3 cup. This will take about 15-20 minutes. 
  2. Place the watermelon, feta, basil and shallot in a serving bowl. Just before serving, carefully stir to thoroughly combine the ingredients.
  3. When the pomegranate reduction is ready, drizzle it over the top of the salad. This should be done just before you take the salad to the table.

This salad is Summer in a bowl: juicy sweet watermelon, tangy-salty feta, and herbal basil combine for a symphony of flavor. The pomegranate drizzle was the perfect foil for these flavors, providing a sweet-tart punch of flavor. There's only a bit of shallot, but it provide a subtle background flavor that worked well in this salad. With only five ingredients, it's quick to make too.
