125 Best Chocolate Chip Recipes Cookbook #Giveaway...Featuring Chocolate Caramel Sauce

Sometimes, you just want to have fun in the kitchen…enter chocolate chips! These fun bite-sized nuggets of chocolaty goodness are so versatile too. My all-time-favorite cookie is chocolate chip, so I’m a chocolate chip lover from way back! Imagine how excited I was when I received a copy of the 125 Best Chocolate Chip Recipes cookbook in the mail a few weeks ago. I immediately sat down with the book and marveled at the wide variety of ways that Julie Hasson uses chocolate chips in her recipes. This fun cookbook features easy, imaginative recipes for cookies, cakes, pies, breads, puddings, bars and squares, muffins, hot and cold beverages and extraordinary sauces. For breakfast, try the Chocolate Chip Oat Breakfast Biscuits or Chocolate Chip Hotcakes. Kids will go crazy for Chocolate Dipped Pretzels and Chocolate Chip Cherry Bars...and adults will swoon over the Chocolate Espresso Lava Cake that was featured on the Today show.

Trying to select just one recipe from this fabulous cookbook was SO hard! However, I knew I had found just what I was looking for when I spied a simple, quick recipe for Chocolate Caramel Sauce. This quick-cook sauce/dip combines two of my favorite flavors in one delicious bite, so I knew I had to make a batch for dessert that night. I love that this sauce is literally ready in about 5 minutes – talk about instant gratification! That makes this recipe perfect for last-minute dinner guests, a decadent ice cream topping…or even holiday gift giving. Simply make a batch of this decadent sauce, pour it into a decorative serving bowl, and add your favorite dippers on the side. I used strawberries, Gala apple slices, mini palmier cookies, and strawberry flavored marshmallows. Voila – a simple, fun dessert!
Chocolate Caramel Sauce
from 125 Best Chocolate Chip Recipes

Ingredients (makes 1.5 cups of sauce)
  • 1/4 cup unsalted butter
  • 3/4 cup packed light brown sugar
  • 1/3 cup light corn syrup
  • 1/4 tsp. salt
  • 1/3 cup whipping cream (35%)
  • 1/3 cup semisweet chocolate chips
Step 1: In a medium saucepan, melt butter over medium heat. Add brown sugar, corn syrup, and salt. Increase heat to medium-high and bring mixture to a boil, stirring constantly. Once boiling, it will look like bubbling lava. Boil for 1 minute and remove from heat.
Step 2: Whisk in cream. Add chocolate chips, whisking until smooth. The sauce will look as if it’s separating, but will smooth out after a minute or so of whisking. Sauce will thicken as it cools.
Oh. My. Goodness! This heavenly sauce is downright decadent for chocoholics and caramel lovers alike. I especially loved that this recipe literally took minutes to prepare, making it a perfect anytime dessert or snack. The texture of the sauce is smooth like caramel, but the chocolate flavor really shines through. This sauce is best served warm, but it remains soft and dip-able at room temperature too. I loved the dippers I selected, but the Gala apple slices were my favorite – it was like eating an upscale caramel apple! 
I can see myself making this sauce very often during the upcoming Fall/holiday entertaining season.
