Easy Pork Chop Recipes #SundaySupper...Featuring Spicy Maple-Glazed Pork Chops with Jalapeno Cheese Grits

One of my favorite quick-cook weeknight dinners is lean, boneless butterflied pork chops. They can be grilled or seared in about 10 minutes, and they're so versatile! This week, #SundaySupper is featuring Easy Pork Chop recipes. Our hostess is Shelby from Grumpy’s Honeybunch, who asked us to share our favorite easy-to-make pork chop recipes. My Spicy Maple-Glazed Pork Chops with Jalapeno Cheese Grits are a snap to make -- easy enough for a simple weeknight dinner, but fancy enough to serve to company.

This is my personal spin on a recipe that I saw in Southern Living awhile back. Lean boneless pork chops are sprinkled with an easy homemade spice rub, then seared and glazed with a spicy maple-infused BBQ sauce. These spicy-sweet pork chops cook up juicy and tender and are served over a base of creamy jalapeno cheese grits. This comforting dish is ready to eat in about 30 minutes, and it's so tasty. The spice level is moderate, but it can easily be adjusted to suit your family's preference.

Spicy Maple-Glazed Pork Chops with Jalapeno Cheese Grits

Ingredients (makes four servings):
  • 4 boneless pork chops -- approx. 4 ounces each
  • 2 tbs. olive oil
For the spice rub:
  • 1 tsp. sea salt
  • 1 tsp. freshly ground pepper
  • 1 tsp. onion powder
  • 1/2 tsp. coriander
  • 1/2 tsp. cumin
For the glaze:
  • 1/2 cup BBQ sauce of your choice
  • 1/3 cup pure maple syrup
  • 1 tbs. chipotle-flavored hot sauce

For the jalapeno cheese grits:
  • 2 cups chicken broth (or 2 cups water + one chicken cube of chicken bouillon)
  • 1/2 cup quick-cook grits
  • 1 cup shredded jalapeno-cheddar cheese
  • 2 tbs. butter
  • 1/3 cup plain whipped cream cheese
  • 2 green onions, thinly sliced
Directions:
Step 1: Make the spice rub by combining the salt, pepper, garlic powder, cumin, and coriander in a small bowl; set aside. Make the glaze by combining the BBQ sauce, maple syrup, and chipotle hot sauce in a small bowl.
Step 2: Heat the olive oil in a large non-stick skillet over medium heat. When the pan is heating, sprinkle the spice rub onto both sides of each porch chop. Sear the pork chops for 4 minutes per side, until golden brown. Spoon some of the glaze on top of each chop, flip to sear -- be sure to reserve some of the glaze for serving. Repeat on the other side of the pork chop. Cook for 1-2 minutes per side, until the chops are glazed. Turn off heat and cover while you make the grits.
Step 3: Add the chicken broth to a medium saucepan over med-high heat. Bring to a rolling boil. Reduce heat to med-low and gradually sprinkle the grits into the boiling broth. Cook for 5-7 minutes, stirring occasionally to prevent lumps. When the grits are cooked, turn off the heat. Add the whipped cream cheese, shredded jalapeno cheese, butter, and green onion. Stir until the butter is melted and the cheese and cream cheese is incorporated into the grits. To serve, spoon some of the grits onto each plate. Top with a pork chop and spoon some of the reserved glaze over the pork chop.
These pork chops are incredibly good! They cook up tender and juicy -- and the glaze is a nice combination of smoky, spicy and sweet. If the weather is nice, you could grill the chops instead of pan searing them. The grits are creamy and mildly spicy from the addition of jalapeno-infused cheddar cheese. These two components combine to make a fantastic dinner -- simply add a tossed green salad or some roasted asparagus to round out your meal.
