There are two kinds of cobbler that I usually see served here in Texas. One features a top layer that's like flaky pie crust and not very sweet. The other features a sweeter cake-like topping. That's my preferred type of cobbler, so I set out to find a recipe to start with as a guide. I quickly found a recipe for French Apple Cobbler at about.com Southern food. I used it as a jumping off point, but tweaked it quite a bit. It was so simple to make. The most time-consuming part was peeling and slicing the apples. I received a GREAT yellow Microplane Easy Prep Straight Peeler in a blog giveaway awhile back. I'm officially in love with it...it easily peeled the six apples for this cobbler in about 5 minutes!
It may have been 80 degrees outside when I baked this cobbler on Thursday evening, but my kitchen smelled just like Fall as the cobbler cooked away...I just cranked the a/c and pretended like Fall had made its way to Central Texas. A gal can pretend, right?!?!?
French Apple Cobbler
with Cinnamon-Maple Whipped Cream
adapted from about.com Southern Food
Step 1: Preheat oven to 375. Butter a 9x9 baking dish and set aside. To make the apple filling, combine the following ingredients in a large mixing bowl: 2 sliced Granny Smith apples, 2 sliced Pink Lady apples, 2 sliced Braeburn apples, the juice of 1/2 a lemon, 1 tbs. vanilla, 1/4 cup maple syrup, a pinch of salt, 1 tbs. high-oil cinnamon, 1/2 cup sugar, 1/4 cup packed brown sugar, and 2 tbs. all-purpose baking mix (I used Bisquick). NOTE: You should have 5-6 cups of sliced apples from the amount given above.
Step 2: Stir with a sturdy spoon until all the apple filling ingredients are thoroughly combined and the apples are all coated with the other ingredients. Pour the apple filling into the prepared pan and dot with 2 tbs. butter that's been cut into small cubes. NOTE: I used Land 'o Lakes butter with sea salt.
Step 3: Make the topping of the cobbler by combining the following ingredients in a large mixing bowl: 1 cup all-purpose baking mix, 3/4 cup sugar, 3/4 tsp. baking powder, 1/2 tsp. salt, 3 tbs. melted butter, 1 tbs. vanilla, and 1 egg. Stir until all the ingredients are combined. The consistency will be between a cookie dough and cake batter. Drop dollops of the dough on top of the apples and use a spatula to spread it over the apples. Don't panic if it doesn't completely cover the apples. As the cobbler bakes, it spreads out and cooks up really nicely!
Step 5: To make the whipped cream, add the following ingredients to a bowl: 1 cup heavy cream, 1 tbs. vanilla, 1/2 cup maple syrup, 1 tbs. high-oil cinnamon, and 1/3 cup powdered sugar. Whip until stiff peaks form. In case you're wondering why I add powdered sugar, I find it helps stabilize whipped cream and allows it to stay whipped for a longer period of time. When you're ready to serve, dish the cobbler into shallow bowls and spoon some of the whipped cream on the side. By the way? Blue Bell Homemade Vanilla ice cream is also an appropriate cobbler pairing in Texas as well.

Mmm...I can almost smell it! Yum.
ReplyDeleteIt smelled SO GOOD when it was baking...when I reheated it at work the next day, all my new co-workers commented on how good my office smelled. All that cinnamon and vanilla...
DeleteI love that this apple dish is so easy to put together and that whipped cream sounds AMAZING!
ReplyDeleteFast is always good in my book...it was ready to go in the oven in about 20 minutes, then it did its thing in the oven while i did other things around the house.
DeleteLove that you used three different types of apples.
ReplyDeleteI like Granny Smith, but thought using just them would make it too tart. So...I just decided to use a mixture.
DeleteWhat a wonderful quick apple dish. The topping is the same kind I like (over the pie crust kind).
ReplyDeleteI like cobbler with a pie crust topping...but this cakey topping is my personal favorite. If I want pie, I can order pie...KWIM?
DeleteOh Wendy this looks absolutely heavenly. Now I wish I could get your blog AGAIN. :) Seriously - this just looks FANTASTIC!
ReplyDeleteI'm pretty sure the daughter and I are going to be whipping this one up. I'll let her post it to her blog though. ;)
Thanks, Nicole! I don't bake all that often, so you can bet it's likely going to be something really quick/easy when I do. Every once in a while, I challenge myself and make a scratch cake...but simple baking is more up my alley.
DeleteI love how easy this is to put together, Wendy! The cinnamon maple whipped cream sounds like the perfect topping for this delicious cobbler!
ReplyDeleteMy husband contends that Blue Bell Homemade Vanilla ice cream is the only proper partner for cobbler, but I liked the whipped cream quite a bit. You could really go for it and have a bit of both...
Deletewow that whip cream on top look perfect!!
ReplyDeleteIt is really good...not overly sweet! I've used it before on other recipes, so I was hoping it would go well with the cobbler!
DeleteWould it be bad of me to just eat the whipped cream by itself? For a second serving of dessert???
ReplyDeleteHa...not at all! It's almost like a maple-cinnamon mousse..and it's delish in its own right. It's really good on top of a pumpkin latte or hot chocolate too...just saying!
DeleteI'll take a huge heaping of this, please. It looks fantastic. Happy #SS!
ReplyDeleteThanks, Jennie...you bring the meatballs and I'll bring the dessert!!
DeleteMy husband love cobblers! This one is too simple and quick to not make it! Looks delicious!
ReplyDeleteIt really is good...especially if you like a LOT of cinnamon!
DeleteThe perfect way to meet the co-workers! It looks so caramelized and that maple cream sounds perfect with it.
ReplyDeleteI sprinkled sugar pretty generously on top of it...maybe 1/3 cup? The maple cream is off the charts!
DeleteI am so ready for fall weather a great comforting desserts like this.
ReplyDeleteMe too! It's coolER here, but still not quite Fall weather. We are 88 degrees this afternoon...which is better than the upper 90s earlier this month. Maybe by this time next month, it'll be "soup weather"...one can hope!
DeleteCinnamon Maple Whipped Cream! I cannot even concentrate on the cobbler. That sounds amazing, thank you so much for sharing!
ReplyDeleteIt's a good little topping to have in your back pocket! Try it on hot chocolate or chai tea...it'll knock your socks off!!
DeleteOh my goodness: cinnamon maple whipped cream!!! That definitely sounds like the perfect pairing with your cobbler...YUM!
ReplyDeleteIt played really nicely against the cinnamon and maple in the cobbler...but it wasn't overly sweet.
DeleteA quick and easy apple dessert! Just lovely! The whipped cream is OMGosh good!
ReplyDeleteWhat a great idea! It looks delicious!
ReplyDeleteLooks delicious!
ReplyDeleteOh, Wendy, when you make a dessert, you do it right! LOVE a good cobbler, and this is a GREAT cobbler! Happy #SundaySupper!!!
ReplyDeleteThis is spectacular. You really amped up the taste. Love flavoured whipped cream.
ReplyDeleteI'll have seconds. :)

ReplyDeleteSeriously?! That whipped cream is incredible! I can't imagine how good it is with the cobbler!
ReplyDeleteThat whipped cream adds a wow factor to a delicious dessert, I could just dive right in!
ReplyDeleteHOW IRONIC IS THIS WENDY: the microplane peeler you won in MY blog giveaway (Cindy's Recipes and Writings) you used for a fantastic recipe during my hosting of #SundaySupper! lol
ReplyDeleteThis really looks delish - especially with that maple cream!

ReplyDeleteWhat a unique take on cobbler - I've never had it with a cakey layer on top! That final photo of the finished cobbler with the maple whipped cream is seriously making me drool. It looks so luscious and packed with flavour.
ReplyDeleteoh I want some. I've never been so miserable being on a diet more than now. I just want to jump head into the cobbler and eat my way out of the pan. sigh... girl can wish right?!
ReplyDeleteThe entire dessert sounds fantastic, but that cinnamon-maple whipped cream! I think I could probably eat just a bowl of that!
ReplyDeleteYour cobbler looks so good. I love those peelers.
ReplyDeleteOh wow, this sounds just wonderful! I wish I had a big bowl of this in front of me right now. =)
