Campbell’s Soups for Easy Cooking…Featuring a Duo of Easy Weeknight Skillet Dinners #WeekNightHero #CollectiveBias

My weekday schedule can get very busy…so I’m always looking for new ways to create delicious dinners that don’t dirty every dish in my kitchen or take all night long to cook. I recently discovered a great new product that helps me do both. Thanks to Campbell's Soups for Easy Cooking, I'm a #WeekNightHero! I went to my neighborhood Walmart, where I easily located the square cartons of Campbell’s Soups for Easy Cooking on the soup aisle – just below the traditional cans of Campbell’s soups. All four flavors sound great, but I decided to try the Creamy Herb & Chicken with Chicken Stock and Sweet Onion flavors for the recipes I'm sharing today.
To save myself both time and money, I decided to center both of my dinner skillets on shared ingredients: sliced baby bella mushrooms and shredded Swiss cheese. My Beefy French Onion Pasta Skillet and Mushroom-Swiss Chicken and Rice are definitely a step above the usual casserole. Both skillets are a complete meal, and they can be ready to serve in 30 minutes. Even better? They both taste amazing!
Beefy French Onion Pasta Skillet

Ingredients:
  • 1 carton Sweet Onion Campbell’s Soups for Easy Cooking
  • 1 tbs. olive oil
  • ½ yellow onion, cut into thin strips
  • 1 cup chopped baby bella mushrooms
  • ¾ lb. stir fry sliced beef strips
  • 8 ounces rotini pasta, cooked per package directions
  • 1 cup shredded Swiss cheese
  • Salt & pepper to taste
Directions:
Step 1: Cook pasta according package directions. While the pasta cooks, add the olive oil to a large skillet over med-high heat. When the skillet is hot, add the onion and mushrooms. Cook, stirring frequently, until the onions begin to turn golden and the mushrooms are cooked – about 5 minutes.
Step 2: Add the beef strips to the skillet and cook until they're starting to brown – about 4 minutes. Add the Sweet Onion Campbell’s Soup for Easy Cooking and stir to combine. Reduce heat to low and let the mixture simmer while the pasta finishes cooking. Add salt & pepper to taste.
Step 3: Drain the cooked rotini pasta and add it to the skillet. Stir well to thoroughly combine all of the ingredients, then top with the shredded Swiss cheese. Sprinkle with parsley for a bit of color just before serving.
This flavor of this dish was definitely reminiscent of French onion soup. I loved the melty cheese and the rich flavor that the Campbell's Soup for Easy Cooking Sweet Onion gave the sauce. This one's definitely a keeper! My second skillet is a twist on traditional chicken and rice casserole. It features shallots, mushrooms, and Swiss cheese. Using instant rice means that this skillet is ready to eat in a flash.
 
Mushroom-Swiss Chicken and Rice

Ingredients:
  • 1 carton Creamy Herb & Garlic with Chicken Stock Campbell’s Soup for Easy Cooking
  • 1 tbs. olive oil
  • 1 shallot, thinly sliced
  • 1 cup chopped baby bella mushrooms
  • ¾ lb. thin chicken breasts, cut into thin strips
  • 1 cup water
  • 2 cups instant rice
  • 1 cup shredded Swiss cheese
  • Salt & pepper to taste
Directions:
Step 1: Add the olive oil to a non-stick skillet with high sides. Heat over med-high heat. Add the chicken strips and cook until brown, stirring frequently – about 5 minutes. Remove the chicken and set aside. Add the shallot and mushrooms to the pan and cook until they are softened. Add the Creamy Herb & Garlic with Chicken Stock Campbell’s Soup for Easy Cooking to the pan and stir to combine.
Step 2: Add the water and instant rice; stir well to combine and add the chicken back into the pan. Give it another quick stir, then cover. Reduce heat to low and cook for 5 minutes.
Step 3: Turn off heat and remove lid. Sprinkle the Swiss cheese on top, then replace the cover and let sit for 5 minutes. Just before serving, sprinkle with chopped parsley if you want a pop of color. Serve straight from the skillet at the table -- and get ready for compliments!
The Mushroom-Swiss Chicken and Rice is flavorful from the addition of the nutty, sharp Swiss and the meaty mushrooms. Both of my skillet meals were so tasty that Michael asked for seconds – the husband seal of approval is always a good indication that a dish is a winner! I can’t wait to make both of these meals over and over again…and to try the other two flavors of Campbell’s Soup for Easy Cooking.
