Like many of you, I lead a very busy life. In addition to sharing food, restaurant spotlights, and culinary travel features here at The Weekend Gourmet? I have a busy day job too. That means that my time is always at a premium -- so I'm always looking for ways to take a few minutes to pamper myself. Thanks to my friends at Stonyfield and prAna, I can feel good and be true to #TheWholeMe. I recently received a pair of fabulous prAna Mantra pants. These pants are super comfortable...dressy enough to pair with a nice blouse for work, but casual enough to pear with a tee for a day of running errands. The honey-lime yogurt sauce features Stonyfield Vanilla Greek yogurt flavored with honey, a bit of fresh-squeezed lime juice, and a pure vanilla extract to enhance the vanilla flavor of the yogurt. This delicious sauce is spooned over a variety of Vitamin C-rich berries and topped with your favorite granola for a bit of crunch. This creamy, lightly sweet yogurt sauce is also great drizzled over your morning oatmeal...and as a dip for graham cracker sticks. The best thing about my Mixed Berries with Honey-Lime Yogurt Sauce and Granola?  It literally takes 5 minutes to assemble -- so now there's no excuse for skipping breakfast or resorting to an unhealthy snack. Mixed Berries with Honey-Lime Yogurt Sauce and Granola

Ingredients (makes two servings):
  • 1.5 cups mixed berries [NOTE: I used a combination of strawberries, blueberries, raspberries, and blackberries]
  • 5.3-ounce container container Stonyfield Vanilla 0% Greek Yogurt
  • 1 tbs. honey
  • Juice of half a small lime
  • 1 tsp. pure vanilla extract
  • 1/2 cup granola 
Directions:
Step 1: Combine the Stonyfield yogurt, honey, lime juice, and vanilla extract in a small bowl until evenly combined.
Step 2: Place half of the berries in two small parfait glasses or bowls.
Step 3: Drizzle the berries with 2-3 spoons of the honey-lime yogurt sauce. Sprinkle half of the granola on top of each parfait. 
This easy-to-make breakfast or afternoon snack is a snap to make...and so tasty! The tart berries are complimented by the creamy, lightly sweet sauce. The little bit of lime juice in the sauce pics up nicely on the tangy flavor in the yogurt. The granola provides a nice bit of sweet crunch to every bite. Healthy and delicious treats like this are how I find my personal post-work afternoon bliss.
