The month of August is going to be a celebratory month here at The Weekend Gourmet. That's because it's my officially the SEVENTH anniversary of starting this blog in August 2010! I have all sorts of fun recipes to share...and a couple of fun giveaways planned...to mark this milestone all month long. I originally started The Weekend Gourmet as a place to share my favorite recipe successes with my family and friends. I never dreamed it would grow and evolve since then to encompass product features, restaurant spotlights, and culinary travel. I have simply embraced every fun opportunity that's come my way. A creamy chicken filling is rolled in flour tortillas, brushed with garlic-infused oil, and baked until crispy. It's been pinned more than 347,000 time so far, and I've received a ton of positive feedback from readers who've made it in their kitchens. It's a winner of a recipe, so I wanted to share it again here today.

Crispy Chicken Tortilla Rollups
a Weekend Gourmet Original
Ingredients (makes 8-10 rollups):
- 1/3 cup canola oil + 2 grated garlic cloves
- 8-10 flour tortillas
- 2 tsp. dried cilantro
- 2 tsp. chili powder
- 6 ounces non-fat plain Greek yogurt
- 12 ounces cooked chicken, shredded [NOTE: deli roasted chicken is perfect for this recipe!]
- 1 cup Colby Jack cheese
- ½ cup frozen corn kernels, thawed
- 1 small jalapeno or serrano pepper, seeded and finely chopped
- 1-2 green onions, thinly sliced
- 2 garlic cloves, minced or grated
- 1/3 cup prepared salsa
- 1 tsp. cumin
- Juice of half a lime
- Salt and pepper to taste
For the avocado-lime dipping sauce:
- 1 large avocado, peeled and mashed
- 6 ounces nonfat plain Greek yogurt
- Juice and zest of one lime
- 1 tbs. finely chopped cilantro
- 2-3 drops hot sauce
- Salt & pepper to taste
Directions:
Step 1: Preheat oven to 400. Add the filling ingredients to a large mixing bowl. Stir with a sturdy spoon until evenly mixed. Heat the canola oil and two grated garlic cloves in a small saucepan over med heat. When the oil is hot, turn off the heat and let the garlic infuse into the oil for 5-10 minutes.
Step 2: Assemble the rollups by adding 2 tbs. of filling along the lower third of each flour tortillas -- sprinkle with a bit more cheese before rolling if you want your rollups to be extra cheesy! Roll t eet lined with parchment. Brush each rollup with the garlic-infused oil and sprinkle with salt, dried cilantro, and chili powder. Bake he tortillas up and place seam side down on a large rimmed baking shfor 8-10 minutes, flipping over halfway through cooking so both sides brown and crisp evenly.
Step 3: Make the avocado-lime dipping sauce by combining the mashed avocado, plain Greek yogurt, lime juice and zest, cilantro, hot sauce, and the salt & pepper. Spoon the sauce into a decorative dip bowl. Serve the rollups on a festive platter with the avocado-lime dipping sauce on the side -- along with salsa and/or sour cream on the side.
These rollups are so popular because they're amazingly delicious! They feature a crispy, flavorful outside…and a creamy filling inside. I love the hint of sweetness that the corn kernels add, as well as the slight tang from the yogurt and lime juice. These rollups will make a fantastic addition to upcoming football game day menu -- simply cut them in half for easier eating. Spicy, crispy, cheesy and comforting? It's the perfect trifecta!
