Thanksgiving is day after tomorrow -- can you believe it?!? I'm so excited to spend a few days in Houston celebrating with our families...eating some great food and spending time relaxing before the hectic holiday season hits full stride. Today, I'm sharing an easy recipe for a warm seasonal cocoa that's perfect for sipping over the upcoming holiday weekend -- and during the entire holiday season! My Pumpkin Pie Hot White Chocolate is like sipping a piece of pumpkin pie...and it's ready to enjoy in minutes. If you love pumpkin pie or pumpkin spice latte, then this beverage is perfect for you!

This comforting beverage is prepared on the stovetop, and the ingredients are easily doubled -- or even tripled -- to serve a crowd. It's made with vanilla almond milk, seasonal Coffeemate natural bliss® Pumpkin Spice creamer, white chocolate chips, fresh pumpkin puree, and warm pumpkin pie spice. If you haven't tried Coffeemate natural bliss® creamers, you're in for a treat! This all-natural line is made from real milk and cream from cows that aren't treated with added growth hormones -- and it's flavored with spices and real pumpkin. I especially love that these versatile creamers can be used to flavor more than coffee. Pumpkin Pie Hot White Chocolate

Ingredients (makes two servings):
  • 1 cup vanilla almond milk [NOTE: can substitute 2% dairy milk if you prefer]
  • 1/2 cup Coffeemate natural bliss® Pumpkin Spice creamer
  • 1/2 cup good-quality white chocolate chips
  • 1 tsp. vanilla bean paste OR pure vanilla extract
  • 1/2 tsp. pumpkin pie spice
  • 1/2 cup canned pumpkin puree -- not pumpkin pie filling
  • 2-4 Pumpkin Pie Smashmallow marshmallows 
Directions:
Step 1: Add the almond milk/milk, Coffeemate natural bliss® Pumpkin Spice creamer, and white chocolate chips to a small non-stick saucepan over medium heat. Whisk the ingredients over heat until the white chocolate chips melt and completely incorporate into the liquid -- this should take about 5 minutes. 
Step 2: Whisk in the pumpkin pie spice and vanilla bean paste/extract. Finally, whisk in the pumpkin puree until it's completely incorporated with the liquid ingredients.

Step 3: Pour the hot white chocolate into two mugs -- small clear mason jars are a nice way to show off the beverage's gorgeous light orange color! Just before serving, top each serving with 1-2 Pumpkin Pie Smashmallow marshmallows, and sprinkle a bit more pumpkin spice on top.
This might be pumpkin spice latte season...but my Pumpkin Pie Hot White Chocolate is definitely a show stopper too! It's a perfect way to start Thanksgiving morning, paired with a toasted bagel or English muffin for a light breakfast. It would also make an excellent nightcap to savor while relaxing on the couch Thanksgiving evening. No matter when you serve it, this beverage is warm and comforting...and full of classic pumpkin pie flavors!
