The Christmas season is nearly over...which means it's time to get back to carefully watching our sugar and caloric intake after a few weeks of splurges and indulgences! I'm taking part in the Steviva Holiday Keto Blogger Recipe Challenge Contest...and my submission is in the contest's Beverage category. I used Steviva's KetoseSweet+ liquid sweetener in my sweetly tart, fizzy Sugar Free Sparkling Cranberry-Lime Mocktail. It tastes so great that nobody will suspect that it has no added sugar!

KetoseSweet+ liquid sweetener contains stevia, monk fruit, and allulose — a rare natural sugar found in maple syrup, figs. and raisins. It's a safe, non-caloric, non-glycemic sweetener that has just 5% of the calories of regular sugar. There are 0 calories in each one-tablespoon serving!  I used the KetoseSweet+ liquid sweetener to create a big-flavor cranberry simple syrup that's the base of my mocktail. The sweet-tart cranberry simple syrup is flavored with frozen cranberries, orange peel, rum extract, and just a touch of cinnamon -- and it's a gorgeous magenta color! The recipe makes about 1 cup of simple syrup -- enough to store in the fridge for a day or two worth of these tasty beverages.
Sugar Free Sparkling Cranberry-Lime Mocktail a Weekend Gourmet Original
Ingredients (for approx. 12 beverages):

  • 3/4 cup fresh squeezed lime juice

  • 96 ounces (12 cups) sugar free sweetened lime sparkling water OR lemon-lime diet soda

  • For garnish: 12 lime wedges and additional frozen cranberries

  • For the simple syrup:
    • 1 cup KetoseSweet+ liquid sweetener
    • 1.5 cups frozen cranberries
    • 3 large pieces orange pee
    • 1/2 tsp. rum extract
    • 1 tsp. cinnamon
      Directions: Step 1: Add the KetoseSweet+ liquid sweetener, cranberries, orange peel, rum extract, and cinnamon to a small saucepan. Give the ingredients a stir and turn heat to medium.
      Step 2: Cook until the cranberry mixture is simmering, but do not boil. Once the mixture simmers, cook for five minutes. The cranberries should not burst, but the syrup will thicken and turn magenta pink.
      Step 3: Drain the simple syrup in a colander to remove all solids. You will have approximately 1 cup of cranberry-infused simple syrup. Store covered in the refrigerator until the simple syrup is chilled. It will thicken a bit, so don't panic! Once you add the liquid ingredients and stir, it will dissolve perfectly.
      Step 4: To assemble the mocktails as a punch for a group of people: add the simple syrup, lime juice, and sparking water/diet lemon lime soda to a large pitcher. Stir well to combine all of the ingredients. To make a single beverage: pour 1.5 tbs. of the simple syrup into a glass. Add 2 tbs. lime juice and 8 ounces of sparkling water/lemon-lime sugar free soda. Stir to combine and add ice. Just before serving, garnish with a lime wedge and several frozen cranberries.
      This sweetly sour mocktail is fizzy fun in a glass! It would be an ideal family-friendly beverage to ring in the new year...and it would make a great sugar-free beverage option for NFL playoff parties. The homemade simple syrup lends a pretty pink color to the beverage. It also packs a fruity punch from tart cranberries and citrus well as warm notes from the rum extract and cinnamon. No one who tasted it could believe that it contained no added's a keeper, y'all!
