

Beyond Deluxe Nacho Burgers

Ingredients (makes two burgers):
- 2 hamburger buns
- 1 two-pack Beyond Burger™
- 6-8 tortilla chip triangles
- 1 slice sharp Cheddar cheese cut into four small squares
- 1/3 cup fat-free vegetarian refried beans
- Shredded lettuce
- 1/2 Haas avocado
- 3 tbs. lite Ranch dressing
For the pico de gallo:
- 1 cup quartered grape tomatoes
- 1 green onion, thinly sliced
- 1/3 cup chopped red onion
- 1/2 jalapeno, seeded and finely chopped
- 1 tsp. fresh cilantro, chopped
- Juice of half of a lime
- Salt & pepper to taste
Directions:
Step 1: Up to four hours ahead of serving, make the pico. Add the tomatoes, green and red onion, jalapeno, cilantro, lime juice, and salt & pepper to a small bowl. Stir to combine, cover, and refrigerate until it's time to assemble the burgers.
Step 2: Make the avocado-ranch spread. Add the avocado half to a small bowl. Mash with a fork until a few chunks remain. Add the Ranch dressing and stir until they ingredients are combined into a thick sauce. Cover and refrigerate until it's time to assemble the burgers.
Step 3: Spray a non-stick grill pan with non-stick spray. Heat on med-high for five minutes. Add the Beyond Burger™ patties. Sprinkle with salt and pepper, then cook for 3-4 minutes. Flip the burgers, then top each with 2-3 tortilla triangles. Place two of the cheese squares on top of the Beyond Burger™ patties. Cover loosely with foil until the cheese melts -- about 3-4 minutes.
Step 4: Assemble the burgers. Heat the refried beans in the microwave and spread half on the bottom half of two buns. Spread half of the avocado-ranch on the top half of the buns, then top with shredded cheese. Place a cheese- and tortilla chip-topped patty on top of the refried beans. Carefully spoon some of the pico on top of the patties and the lettuce.
Carefully place the top half of the bun onto the half with the Beyond Burger™ patty. Press down lightly to ensure all of the ingredients meld together and serve with more tortilla chips on the side. My Beyond Deluxe Nacho Burgers are an EXPLOSION of flavors and textures! It's like bean and cheese nachos topped with avocado and pico de gallo fell in love with a cheeseburger...heavenly. The Beyond Burger™ definitely had the texture and flavor of a traditional burger! The verdict? My burger-loving husband gave it an enthusiastic thumbs up and said he would eat a Beyond Burger™ any time. That's a huge endorsement, my friends!!
