Air Fryer Southwest Pulled Chicken Egg Rolls

Ingredients (makes 8 egg rolls):
- 8 egg roll wrappers -- not potsticker or dumpling wrappers
- 16-ounce package Jack Daniel's Tennessee Honey Pulled Chicken, heated per package instructions
- 2 slices sharp cheddar cheese cut into 8 even strips
- 1 small avocado halved, peeled, and cut into 8 slices
- 4 green onions, thinly sliced
For dipping: Ranch and/or blue cheese dressing
Directions:
Step 1: Preheat air fryer to 375℉. Place one egg roll wrapper on your cutting board. Place one strip of cheddar and one slice of avocado near the top of the egg roll wrapper. Spoon a small mound (1-2 tbs.) of cooked Jack Daniel's Tennessee Honey Pulled Chicken on top of the avocado. Sprinkle a bit of green onions on top of the pulled chicken.
Step 2: Fold in the sides of the wrapper over the filling, then roll into a tight egg roll. Spray both sides with a light misting of non-stick spray and place on the baking rack. My air fryer comes with a handy mesh tray that allows both sides to crisp at once.
Step 3: Bake the egg rolls in the air fryer for 4 minutes, then flip over to ensure even baking. Bake an additional 4-5 minutes, until the outside of the egg rolls is golden brown and crispy. Place on a platter and give them a sprinkle of salt. Serve with ranch and/or blue cheese dressing for dipping.
These southwest fusion egg rolls are fun...and so tasty. They bake up nice and crispy in the air fryer. Each bite has smoky-sweet pulled chicken, gooey melted cheese, creamy avocado...and a nice onion flavor from the scallions. Michael preferred them dipped in blue cheese...but I'm a ranch girl. These egg rolls are definitely a keeper!
