Football Food...Air Fryer Southwest Pulled Chicken Egg Rolls Featuring Jack Daniels Pulled Chicken #foodballfood #airfryer #eggroll #gameday

The 2019 NFL season is in full swing...with the playoff picture finally starting to take shape! Our Houston Texans are currently tied for first place in their division. They've had some HUGE wins (hello, Patriots) AND some disappointing losses. That mean's I've been busy in my kitchen creating some fun game day snacks for us to enjoy while we cheer them on. This month, I'm partnering with my friends at Jack Daniel's Meats to create an air fryer egg roll recipe that features their delicious ready-to-use Tennessee Honey Pulled Chicken. Juicy pulled chicken is cooked with Jack Daniel's Tennessee Honey Liqueur BBQ sauce, which gives the smoky meat a sweet-savory flavor. My Air Fryer Southwest Pulled Chicken Egg Rolls are a snap to make...they have just FIVE simple ingredients! They cook up crispy in the air fryer and require only a spritz of non-stick spray oil. They've got a fraction of the fat of traditional egg rolls...but they're bursting with big flavors. I served these golden-brown BBQ-inspired egg rolls with ranch and blue cheese dressing for dipping last weekend. The Texans didn't have a great day...but at least these appetizers scored a flavor touchdown!

Air Fryer Southwest Pulled Chicken Egg Rolls

Ingredients (makes 8 egg rolls):
  • 8 egg roll wrappers -- not potsticker or dumpling wrappers
  • 16-ounce package Jack Daniel's Tennessee Honey Pulled Chicken, heated per package instructions
  • 2 slices sharp cheddar cheese cut into 8 even strips
  • 1 small avocado halved, peeled, and cut into 8 slices
  • 4 green onions, thinly sliced
For dipping: Ranch and/or blue cheese dressing

Directions:
Step 1: Preheat air fryer to 375℉. Place one egg roll wrapper on your cutting board. Place one strip of cheddar and one slice of avocado near the top of the egg roll wrapper. Spoon a small mound (1-2 tbs.) of cooked Jack Daniel's Tennessee Honey Pulled Chicken on top of the avocado. Sprinkle a bit of green onions on top of the pulled chicken.
Step 2: Fold in the sides of the wrapper over the filling, then roll into a tight egg roll. Spray both sides with a light misting of non-stick spray and place on the baking rack. My air fryer comes with a handy mesh tray that allows both sides to crisp at once. 
Step 3: Bake the egg rolls in the air fryer for 4 minutes, then flip over to ensure even baking. Bake an additional 4-5 minutes, until the outside of the egg rolls is golden brown and crispy. Place on a platter and give them a sprinkle of salt. Serve with ranch and/or blue cheese dressing for dipping.
These southwest fusion egg rolls are fun...and so tasty. They bake up nice and crispy in the air fryer. Each bite has smoky-sweet pulled chicken, gooey melted cheese, creamy avocado...and a nice onion flavor from the scallions. Michael preferred them dipped in blue cheese...but I'm a ranch girl. These egg rolls are definitely a keeper!

Not a football fan? That's ok! These egg rolls are also a perfect finger food to take to any holiday parties you have planned the next few weeks. They reheat well and are nice and hearty. I hope you'll give them a try and tell me what you think!!
