JSL Foods Fortune UDON Noodle Blogger Recipe Challenge...Featuring Mardi Gras Noodle Bowl #fortunenudonoodles, #cheftyaki #udonsoups

I'm so exited to be taking part in JSL Foods' UDON Noodle Blogger Recipe Challenge! I love eating soup -- especially when the weather is cool -- and udon noodles are especially hearty and filling! For this challenge, select bloggers are being asked to use JSL UDON Noodles to create fun, unique soup recipes. I received three flavors of noodles to play around with in my kitchen: Chicken, Mushroom, and Original Shoyu. I used the Chicken Flavor UDON Noodles to create my entry for Mardi Gras Noodle Bowls. This hearty soup bowl features spicy flavors typically seen in Louisiana dishes like jambalaya...in a hearty noodle bowl form! This bowl is a complete one-dish meal that contains shrimp, chicken, spicy andouille sausage, aromatic veggies...and a generous amount of seasonings and hot sauce to bring the heat. Best of all? This filling noodle bowl is ready to eat in less than 30 minutes!

Mardi Gras Noodle Bowls

Ingredients (makes 2 generous servings):
  • 1 package Fortune Chicken Flavor UDON Noodles
  • 1 1/2 cup water
  • 1 cup frozen Seasoning Blend vegetables: onion, celery, and bell pepper
  • 2 tsp. olive oil
  • 2 tsp. Creole seasoning blend
  • 1/2 cup chopped chicken breast
  • 1/2 cup medium shrimp, peeled and deveined
  • 1/2 cup diced andouille sausage [NOTE: sub smoked kielbasa if andouille is not available]
  • 1-2 tbs. hot sauce, depending on your desired spice level
  • 2 sliced green onions
Directions:
Step 1: Heat 1 tsp. of the olive oil in a medium saucepan over medium-high heat. Add the Seasoning Blend Vegetables; saute until the vegetables begin to brown. Add 1 tsp. of the Creole seasoning and stir to combine with the vegetables.

Step 2: Add the second tsp. of olive oil to the saucepan. Add the andouille/kielbasa sausage and cook until it starts to brown. Add the chicken and shrimp. Add the second tsp. of Creole seasoning and stir to combine with meats and vegetables. Cook until both meats are cooked and opaque -- approximately 5 minutes.

Step 3: Add the water, seasoning packet, and noodles from the package of Fortune Chicken Flavor UDON Noodles. Bring to a boil and carefully stir to separate the noodles. Reduce heat to med-low and simmer the soup for 10 minutes. Add enough hot sauce to match your preferred level of spice. Divide the soup evenly between two deep bowls. Just before serving, add sliced green onion to each noodle bowl.
This soup is incredibly good -- it's hard to believe that a soup that is ready in about 30 minutes has such a rich depth of flavor! My two taste testers gave it an enthusiastic thumbs up...they loved the spiciness from the maximum amount of hot sauce I added. The udon noodles cooked up thick and a bit chewy...they provided a perfect base for my flavorful noodle bowls!
