Alpha Foods Meatless Crispy Chik'n Patties Coming to San Antonio Costco Locations...Featuring Meatless Fiesta Chik'n Sandwiches #meatless #sandwich #vegfriendly

I want to share some exciting news for food lovers who are looking for delicious meatless meal options! For a limited time, Alpha Foods’ new Crispy Chik’n Patties are now available at San Antonio area Costco locations! Alpha Foods has a line of delicious, plant-based frozen foods made with a blend of quality ingredients. Their goal is to meet the needs of food lovers seeking approachable, convenient meatless meal options. The new Crispy Chik’n Patties are delicious -- they have the texture and flavor of traditional chicken patties! The patties crisp up in the oven in minutes are a perfect canvas to create flavorful foods. With Memorial Day coming up next week, pick up some Crispy Chik'n Patties at Costco and give my Meatless Fiesta Chik'n Sandwiches a try! These fun sandwiches feature creamy provolone cheese, spicy pico de gallo, a chunky avocado spread, and a quick salsa ranch. 
Add some in-season corn on the cob and potato salad on the side...and you have an amazing menu to kick off the Summer right. Even better? No one will ever guess that the Crispy Chik'n Patties are meatless!

Meatless Fiesta Chik'n Sandwiches

Ingredients (makes four sandwiches):
  • 4 Alpha Foods Crispy Chik'n Patties
  • 4 sandwich buns
  • 4 slices provolone cheese
  • 1 cup prepared pico de gallo
For the chunky avocado spread:
  • 1 large avocado
  • Juice from half a lime
  • One garlic clove, finely minced
  • 1 tsp. chili powder
  • Salt & pepper to taste
For the salsa ranch:
  • 1/4 cup ranch dressing
  • 1/4 cup chunky salsa
Directions:
Step 1: Preheat oven to 425℉ and bake the Crispy Chik'n Patties according to package directions. While the patties crisp up, make the other sandwich components. Make the avocado spread by adding the avocado, lime juice, garlic, chili powder, and salt & pepper to a small bowl. Mash until the avocado is a bit chunky and the ingredients are completely combined.
Step 2: Make the salsa ranch by adding your favorite ranch dressing and salsa to a small bow. Whisk until completely combined into a gorgeous pink sauce! Adjust the spice level to your taste by using salsa that's mild, medium, or hot.
Step 3: When the Crispy Chik'n Patties are cooked, assemble the sandwiches. Toast your sandwich buns. Spoon a quarter of the salsa ranch sauce on the bottom half of the bun. Top with a Chik'n Patty and a slice of provolone cheese. Add a quarter of the avocado spread to the top half of the bun, then spoon a quarter of the pico de gallo on top of the avocado. Carefully place the top bun on top of the sandwich and serve.
Step 4: I find it easiest to assemble each sandwich on each person's plate -- it's less messy! Serve the sandwich with tortilla chips for a fun, complete meal.
This sandwich is bursting with all sorts of fun flavors and textures -- starting with the Crispy Chik'n Patties. They bake up crispy on the outside, and juicy inside. You'll never guess the patties are made with plant-based protein. Add in the salsa ranch, avocado spread, cheese, and pico de gallo? They make this sandwich a fiesta for your mouth!
