Bee K'onscious Artisan Organic Honey...Featuring Triple Cheese-Fig Flatbread #beekonscious #honey #figs #flatbread #vegfriendly

It's fig season...and my parents' backyard fig tree is bursting with sweet, ripe figs. Knowing that figs pair naturally with honey, I had a great jumping-off point for today's recipe! My Triple Cheese-Fig Flatbread is a perfect Summer light lunch or wine pairing appetizer...and it's drizzled with Bee K'onscious Organic Artisan Honey. This Colorado-based company sources high-quality, 100% raw honey direct from the bee farm source. Their honey contains no additives -- only pure, traceable, raw honey. My recipe features their rainforest-sourced Organic Raw Brazilian Cipo Uvo HoneyThis organic honey features a light amber color and a floral smell. Its also features a mild fig flavor that pairs perfectly with cheeses. A generous drizzle of this Brazilian honey took my flatbread straight over the top!

This veg-friendly flatbread was inspired by one of my favorite appetizers: quartered figs stuffed with soft goat cheese, wrapped in proscuitto, and drizzled with honey. My flatbread is quick to make because it features a naan base instead of traditional dough. A trio of yummy cheeses -- ricotta, provolone, and goat -- along with smoky prosciutto, and thin slices of red onion perfectly complement the sliced figs. This may  not be a typical flatbread...but one bite will have you hooked! This flatbread is quick enough to whip up for a simple weekday lunch...but it's fancy enough to serve for an at-home date night. I especially love versatile recipes like this!

Triple Cheese-Fig Flatbread

Ingredients (serves 2):
  • 1 large naan bread
  • 1/2 cup part-skim ricotta cheese + 1 tbs. Bee K'onscious Organic Raw Brazilian Cipo Uvo Honey + 1 Tbs. Herbs de Provence
  • 1 ounce thinly sliced provolone cut into pieces
  • 4-5 figs sliced
  • 1 ounce prosciutto cut into bite-size pieces
  • 3 Tbs. soft goat cheese
  • 1/4 cup thinly sliced purple onion
  • For drizzling: 1 Tbs. Bee K'onscious Organic Raw Brazilian Cipo Uvo Honey
Directions:
Step 1: Preheat oven to 375℉. Set naan on a non-stick cookie sheet and set aside. Add the ricotta, 1 Tbs. of honey, and Herbs de Provence to a small bowl. Stir until completely incorporated. Now you're ready to assemble your flatbread.
Step 2: Spread the ricotta mixture on top of the naan. Top with the provolone pieces, then the sliced figs. Evenly arrange the slices of purple onion, prosciutto strips, and small pieces of goat cheese among the fig slices. Bake the flatbread until the cheeses are melted and the naan is golden brown -- approximately 10-15 minutes.
Step 3: Immediately drizzle the hot flatbread with the honey -- making sure to evenly drizzle it on top of the entire flatbread. Slice the flatbread into four pieces and serve.
I can't say enough good things about this flatbread! Every bite features a crunchy base, sweet figs, savory proscuitto, and earthy onion. The trio of cheeses each provide a different texture or flavor: creamy ricotta, melty provolone, and tangy goat cheese. The honey drizzle is divine and perfectly ties all of these different flavors and textures together! As long as the fig tree in Mom & Dad's yard keeps producing figs, this recipe will be a huge part of my Summer recipe repertoire!
