We're finally entering the home stretch of this crazy year... can you believe Halloween is coming up in just two weeks?!?!? The way we participated in 2020 may be different than a typical Halloween...but we can still have fun celebrating safely with family 
at home! Why not whip up a simple, SPOOKY seasonal meal that's a perfect pre-show dinner before enjoying an at-home scary movie fest. hI can't wait to show you how quick and easy it is to create my seasonal Boo-rific Corn Dog Cups with Green Goo Dipping Sauce! It's also a great Halloween kitchen craft project to involve your kids in! Frozen corn dogs are embellished with and presented in Halloween decorations...and served with a vibrant green dipping sauce flavored with avocado, cilantro, and ranch. Family fun and yummy food...that's what life is all about! My step-by-step tutorial will show you exactly how easy this project is to achieve!

Boo-rific Corn Dog Cups 
with Green Goo Dipping Sauce
a Weekend Gourmet Original
Ingredients (makes 6-8 servings):
  • 6-8 frozen corn dogs
For the dipping sauce:
  • 1 cup mayonnaise
  • 1/2 cup sour cream OR 0% plain Greek yogurt
  • 1 Tbs. ranch dressing mix
  • ½ cup green tomatillo salsa
  • 1 small avocado, pitted and cut into chunks
  • ¼ cup fresh cilantro leaves
  • 2 green onions, sliced
  • Juice of one small lime
  • 3-4 drops green food color
  • For décor: decorative Halloween-themed cups, floral foam, black-and-orange paper confetti, a rubber bloodshot eye, and Halloween-themed toothpick banners
Directions:
Step 1: Cook the corn dogs according to the package directions. While the corn dogs bake, make the dipping sauce. Add the mayonnaise, sour cream, ranch dressing mix, green salsa, avocado, cilantro, green onion, lime juice, and green food color to a blender container. Cover and blend until all ingredients are incorporated into a smooth dipping sauce. Spoon the dip into a 1.5-cup capacity Halloween-themed container.
Step 2: Place the floral foam in the bottom of two Halloween-themed cardboard cups. Firmly push the cooked corn dogs sticks into the floral foam to form a cluster -- three or four corn dogs per cup. Carefully arrange the black-and-orange paper confetti inside the cup around the corn dogs, making sure to completely cover the floral foam so it doesn’t show. Place a plastic or rubber bloodshot eye in the center of the green goo dipping sauce.  Serve the corn dog cups with the container of dipping sauce on the side.
This is a simple, festive Halloween-themed meal. The key is to have fun and use decorations that appeal to you! I especially love it when something easy to whip up has so much impact and eye appeal. Hot, crispy corn dogs are a perfect match for the vibrant green, mildly spicy dipping sauce. Bottom lines: things might be a bit different this year, but we can still make some amazing family memories.
