™ Bacon Salt will ensure you make the best spicy-smoky Bloody Mary cocktail -- one that everyone can enjoy! I received a sneak preview of both spices to play around with in my kitchen. Today, I'm sharing a recipe for a fun appetizer that features both of these bold new spices.

My Spicy-Smoky Bloody Mary Shrimp Cocktail features all  your favorite Bloody Mary flavors in a no-cook appetizer that features sweet Gulf shrimp, creamy avocado, and a selection of flavorful additions. The Triple Dog Dare™ brings bold, balanced spiciness to the Bloody Mary base -- thanks to the inclusion of HabaƱero pepper. The shrimp are poached in a flavorful brine that features a generous amount of smoky Happy Hamlet™. This smoky spice also rims the serving glasses, and it's even sprinkled on the tortilla chips that are served on the side of each serving of shrimp cocktail. One bite and you'll quickly realize that you've found an ideal Summer appetizer...or even a light lunch! 

Spicy-Smoky Bloody Mary Shrimp Cocktail
a Weekend Gourmet original
Ingredients (serves 2-3):
  • 1 pound large Gulf shrimp, peeled and deveined -- reserve one peeled shrimp with tail intact for garnish per serving
  • 1 small avocado, diced
  • 1/2 cup diced Roma tomato
  • 1/2 cup diced peeled/seeded cucumber
  • 1/3 cup finely diced purple onion
For the shrimp brine/boil:
  • 3 cups water
  • 2 TBS FreshJax Happy Hamlet™ Bacon Salt
  • 2 garlic cloves, smashed
  • 1/4 lime
For the Bloody Mary base:
  • 1 tsp. FreshJax Triple Dog Dare™ Bloody Mary Mix 
  • 1 cup ketchup
  • 1 cup cocktail sauce
  • 1 TBS Worcestershire sauce
  • 1 TBS soy sauce
  • Juice of half a lime
  • 1/2 cup reserved shrimp boiling liquid
  • 1 TBS vodka (optional)
For serving:
Tortilla chips sprinkled with Happy Hamlet™ Bacon Salt

Directions:
Step 1: Add the water, garlic, lime, and Happy Hamlet™ Bacon Salt to a large saucepan; heat to a simmer over medium-high heat. Add the shrimp and cook just until they turn pink...this ensures they don't overcook. Chop the cooked shrimp and chill in the fridge for at least two hours -- up to the night before. Reserve 1/2 cup of the flavorful  shrimp boil to add to the Bloody Mary base.
Step 2: Place the chilled shrimp, avocado, tomato, cucumber, and onion to a large mixing bowl. Add the Triple Dog Dare™ Bloody Mary Mix, ketchup, cocktail sauce, Worcestershire sauce, soy sauce, lime juice, reserved shrimp boil, and vodka (if using). Stir to combine all ingredients...make sure not to break up the avocado too much!
Step 3: Before serving, warm a platter of tortilla chips in the microwave; sprinkle the warm chips with a generous amount of the Happy Hamlet™ Bacon Salt. To salt the rim of the serving glasses, add Happy Hamlet to a small plate. Rub the rim of each glass with a piece of lime, then press into the Happy Hamlet. Garnish each serving glass with a slice of lime and a reserved chilled boiled shrimp.
Step 4: To serve, place the finished shrimp cocktail into a large glass bowl or drinking glass. Carefully spoon the finished cocktail into the rimmed, garnished glasses. Spoon or scoop the chunky cocktail onto the tortilla chips. 
Yall...OMG...this refreshing shrimp cocktail packs a definite flavor PUNCH: spicy and smoky! The impressive thing is that these are strong flavors...but they never overpower the flavors of the shrimp or veggies. The addition of the Happy Hamlet to the tortilla chips really 8brings each bite together. I used 1 tsp. of the Triple Dog Dare, and the spice level was pretty moderate. Prefer more heat? Simply double the amount of the spice blend! With the Summer grilling and pool season getting ready to kick off, this appetizer is destined to be in heavy rotation. It can easily be assembled the night before for instant gratification the next day.
