Healthy 2021 Recipe: Weekend Brunch Salad #healthy2021 #healthyanddelish #salads #proactivehealth

Hi, everyone...sorry I've been a bit quiet so far this month. But? I've been adjusting to a new healthy eating plan. The good news? I'm two weeks in and seeing excellent results so far! I plan to share a full update in the coming weeks. However, rest assured I'll still be sharing plenty of delicious recipes in here...mostly with a healthier profile. Today, I'm sharing one of my favorite recent recipe creations that's the epitome of brunch. My Weekend Brunch Salad includes some of my favorite breakfast items...presented in a main dish salad form. The taste is familiar...yet new and refreshing. It's also filling without leaving you feeling overly stuffed! As the weather continues to get warmer, this is an ideal light Summer lunch or brunch. The fact that it's lower in fat and carbs is simply a bonus.

Weekend Brunch Salad

Ingredients (ONE salad...but is easily doubled):
  • 1.5 cups salad greens
  • 1/4 cup grape tomatoes cut into quarters
  • 1/4 cup peeled, chopped cucumber
  • 1/8 cup thinly sliced green onion
  • 1/4 cup shredded 2% mozzarella cheese
  • 2 slices cooked turkey bacon, cut into bite-size pieces
  • 2 soft boiled eggs, cut into bite-sized pieces
  • 2 TBS lowfat Ranch dressing [NOTE: I used Walden Farms Ranch]
Step 1: Cook the turkey bacon in a non-stick skillet and chop. Boil the egg for 4 minutes, cool in cold water, peel, and chop.

Step 2: Add the salad greens to a shallow bowl. Top with the tomatoes, cucumber, and green onions. Toss the veggies around to combine. Sprinkle the cheese on top of the salad greens. Arrange the chopped eggs and turkey bacon on top of the salad. Finally, drizzle the Ranch dressing on top. That's it! This filling main dish salad is ready to eat in about 30 minutes
