Celebrating National Tequila Day In Style...Featuring Tequila-Shrimp Confetti Guacamole #NationalTequilaDay #guacamole #shrimp #summerappetizer

So...LAST Saturday was National Tequila Day! I planned to celebrate this festive occasion by sharing my very favorite tequila-infused Summer appetizer. However, a technical glitch kept this amazing recipe from posting as scheduled. Better late than never...I declare that EVERY Saturday is a good time to celebrate tequila! My Tequila-Shrimp Confetti Guacamole is a flavorful layered dip that features a base of tequila and lime-infused guacamole that's spooned into a large margarita glass. The guacamole is topped with a layer of boozy pico de gallo -- which is crowned with sweet shrimp tossed in a tequila-infused cocktail sauce. This gorgeous appetizer is colorful to look at…and even better to eat!

Tequila-Shrimp Confetti Guacamole

Ingredients (serves 4-6 people):
For the guacamole base:
  • 2 large, ripe Haas avocados
  • 2 TBS tequila
  • Juice of one small lime
  • 1 tsp. jalapeno-flavored hot sauce
  • 2 tsp. chopped fresh cilantro
  • 1 tsp. sea salt
  • ½ tsp. cracked black pepper
For the middle layer:
  • 3/4 cup pico de gallo (homemade or store brand)
  • 1 tsp. tequila
For the top layer:
  • 1.5 cups chopped boiled shrimp, well chilled
  • 3 TBS cocktail sauce
  • 1 tsp. tequila
Directions:
Step 1: Make the guacamole base layer. Add the avocado, tequila, lime juice, hot sauce, cilantro, salt, and pepper to a bowl. Use a fork to combine the seasonings and the avocado – I like to leave my guacamole a bit chunky. Spoon the guacamole into a large plastic margarita glass.  Next, make the middle pico layer. Use a spoon to make a well in the center of the guacamole. Drain the pico, stir in the tequila, and spoon the mixture into the well and on top of in the guacamole base layer.
Step 2: Make the top layer. Combine the chopped boiled shrimp, cocktail sauce, and tequila in a small bowl. Carefully mound the shrimp mixture on top of the pico de gallo -- making sure some of the pico layer is visible. Sprinkle with a bit more fresh cilantro if you like.
Step 3: Serve this appetizer immediately if at all possible. However, it’s ok to chill the dip in the fridge -- loosely covered in plastic wrap -- in the fridge for an hour or two. 
Serve this amped-up guacamole with plenty of warm, salty tortilla chips for dipping. It naturally pairs perfectly with a fabulous margarita! The sweet and tangy shrimp layer, spicy pico de gallo layer, and creamy guacamole layer are a winning combination. Since tequila is added to all three layers, its flavor is definitely prominent in every bite – but it’s not at all overpowering. Get ready for everyone to go crazy for this festive party appetizer!
