My least favorite thing to do after a busy day is wash a bunch of dirty pots, pans, and dinner dishes! Sheet pan dinners --which cook an entire meal using just ONE pan -- are a perfect solution to both save time and streamline kitchen cleanup! Today's healthy weeknight dinner recipe is Greek Chicken with Zucchini, Tomatoes, and Mushrooms. This simple dinner features select Summer veggies and Mediterranean seasonings with chicken breast chunks to create a delicious one-pan dinner. This dish literally takes 10 minutes to prep, then it roasts in the oven for about 30 minutes. That gives you a pocket of time to whip up a salad or other side dish. Life these days can be hectic...but dinner doesn't have to be!

Greek Chicken with Zucchini, Tomatoes, and Mushrooms

Ingredients (makes 4 servings)
  • 2 garlic cloves, chopped 
  • 2 tsp. Italian seasoning blend 
  • 1 TBS + 1 tsp. olive oil
  • 3/4 tsp. salt + 1/2 tsp. black pepper 
  • 2.27 lbs. (36.4 oz) boneless, skinless chicken breast, patted dry and cut into 2-inch pieces 
  • 2 cups sliced zucchini 
  • 2 cups button or cremini mushrooms, halved 
  • 2 cups grape tomatoes 
  • 4 TBS (1/4 cup) crumbled feta cheese 
    Directions:
    Step 1: Preheat oven to 400℉. Line a 18x13 rimmed baking sheet with aluminum foil. Spray the foil with non-stick spray and set aside. In a large mixing bowl, whisk together the olive oil, salt & pepper, and Italian seasoning. Add the chicken, zucchini, mushrooms, and tomatoes. Stir well to evenly coat the chicken and veggies with the seasoned olive oil.
    Step 2: Spread the ingredients evenly in a single layer on the prepared baking sheet. Roast for 25-30 minutes, until the tomatoes are starting to burst and the zucchini is tender. To ensure even cooking, turn the baking sheet halfway through the cooking time. Remove the sheet pan from the oven and sprinkle the feta across the top. Serve immediately.
    This simple one-pan dinner is jam-packed with complex flavors! Roasting brings out the flavors and textures of each ingredient...and it brings out the natural sweetness of the tomatoes. The Italian herbs provide great Mediterranean flavors, and the feta provides a tangy punch of flavor. I absolutely love this dish! I can easily see it becoming a part of my regular weeknight dinner rotation. Even better? Because the sheet pan was lined with foil? Cleanup only takes a few short minutes!
