Today, I'm sharing a complete meal salad featuring Wholesome Meats' tender, flavorful tenderloin filet.
My Autumn Steak Salad with Balsamic Dressing showcases the health benefits of main dish salads...but using heartier cool-weather flavors. This hearty salad is bursting with so much delicious flavor and texture! The sublimely tender filet is definitely the star of the show here. However? The other salad components have the big flavors that are necessary to perfectly partner with the meaty beef! This salad has everything that you need for a complete meal: lean protein, organic baby field greens, seared mushrooms and zucchini, briny roasted red peppers, crumbled feta, chopped walnuts, and a tangy balsamic dressing.
Autumn Steak Salad
with Balsamic Dressing
Ingredients (makes ONE salad...but is easily doubled):
- 5.5-ounce raw Wholesome Meats tenderloin filet -- will yield 5 ounces cooked meat
- 1/2 tsp. steak seasoning blend
- Non-stick olive oil spray
- 1 cup baby field greens torn in bite-size pieces
- 2/3 cup sliced zucchini -- approx. 1/8-inch rounds
- 2/3 cup sliced baby cremini mushrooms
- 1/3 cup sliced jarred roasted red peppers
- 2 TBS crumbled reduced-fat feta
- 1/2 ounce walnuts, chopped
- 2 TBS fat-free balsamic dressing
Directions:
Step 1: Cook the tenderloin filet. Heat a heavy cast iron pan over med-high heat for 5 minutes. Sprinkle 1/4 tsp. of the steak seasoning on the steak. Lightly spray the pan with the non-stick spray. Cook the filet for 6 minutes per side -- you'll definitely get a nice sear on the outside! While you cook the vegetables, let the cooked steak sit on the cutting board for at least 10 minutes. This rest time is key, because it lets the steak finish cooking to medium rare/medium via residual heat -- and lets the juices redistribute -- before slicing.
Step 2: Cook the mushrooms and zucchini. Lightly spray the cast iron pan with more of the non-stick spray. Place the mushrooms and zucchini in the pan in an even layer...don't overlap. Sprinkle the veggies with the remaining 1/4 tsp. of steak seasoning. Cook for 3 minutes per side, until cooked through and caramelized. Step 3: Assemble the salad. Place the hand-torn baby field greens in the bottom of a rimmed salad plate. Slice the cooked, rested filet and place the meat along the left side of the plate. Next, arrange 1/3 cup of cooked mushrooms and 1/3 cup of cooked zucchini on top of the greens. Fill the remaining space on top of the greens with the roasted red pepper, feta, and walnuts. Place the fat free balsamic in a small bowl and arrange it at the bottom of the assembled salad. Y'all...this steak is hearty and delicious -- perfect for cool Fall evenings! When you want to eat a meal that's light...but still filling? This is the salad you'll want again and again! The feta, walnuts, red peppers, zucchini, mushrooms, and balsamic all have robust flavors that perfectly complement the meaty filet. Easy enough for a weeknight dinner...but fancy enough to serve company. That makes this recipe a real winner in my book!
