Healthy Appetizers for Game Day and Beyond...Featuring Shrimp Remoulade Deviled Eggs #healthy2021 #lightappetizers #gameday #homegating #deviledeggs

My favorite time of year is here! From now through the end of the year, there's Astros playoff baseball...weekly football games...and plenty of Fall/holiday entertaining. That means I have to carefully plan so I can enjoy some healthy appetizers while sticking with my healthy eating plan! Today, I'm sharing a fun, spicy spin on traditional deviled eggs. My spicy Shrimp Remoulade Deviled Eggs feature my favorite bold shrimp remoulade flavors in a two-bite appetizer! The yogurt-infused filling can be made up to a day ahead -- making assembly time just before serving quick and easy.

Shrimp Remoulade Deviled Eggs

Ingredients (makes 6 servings of FOUR egg halves):
  • 1 dozen large chilled and peeled boiled eggs 
  • 24 medium shrimp -- approx. 1 pound -- boiled, peeled, and deveined
  • 1/2 cup 0% plain Greek yogurt [NOTE: I use Stonyfield]
  • 2 TBS grainy mustard
  • 2 tsp. hot sauce [NOTE: I use Crystal brand here]
  • 2 tsp. Cajun seasoning blend
  • 1/3 cup thinly sliced scallions
  • 1/3 cup finely minced celery
Directions:
Step 1: Cut the boiled eggs in half, and place the whites in the wells of a deviled egg serving platter. Place the egg yolks in a mixing bowl, along with the Greek yogurt, Creole mustard, hot sauce, and Creole seasoning. Use a fork to mash the egg yolks and completely combine all of the other ingredients into a smooth filling.
Step 2: Add the sliced scallion and chopped celery to the filling, and stir to evenly incorporate. Spoon the filling into a plastic zip-top bag, being sure to remove all air. Snip the corner off the bag and carefully pipe an even amount of filling into each egg white.
Step 3: Top each deviled egg half with a boiled shrimp, and lightly sprinkle with a bit more of the Creole seasoning. Serve immediately...or cover loosely with plastic wrap and store in the fridge until you're ready to serve.
Y'all...these Shrimp Remoulade Deviled Eggs are a total flavor BOMB! The filling is definitely on the spicy side, so feel free to reduce the amount of hot sauce if you prefer your food a bit milder. The boiled shrimp definitely provide sweetness and a cooling effect, though. The fat free Greek yogurt keeps the filling super creamy...and it also provides a nice bit of tang. I guarantee you'll never miss the mayonnaise!

This appetizer is has tons of healthy protein...and less fat, carbs, and calories. Deviled eggs are always popular with my family and friends...and these upgraded deviled eggs are always eagerly eaten whenever I serve them.
