It's NFL playoff season...which means we need some game day snacks! These days, I have to carefully plan so I can enjoy appetizers while sticking with my healthy eating plan. Today, I'm sharing a fun spin on traditional deviled eggs. These Shrimp Remoulade Deviled Eggs feature bold shrimp remoulade flavors in a two-bite appetizer. The high-protein, lower fat Greek yogurt-based filling can be made up to a day ahead -- making assembly time just before serving quick and easy on game day!
Shrimp Remoulade Deviled Eggs

Ingredients (makes 6 servings of FOUR egg halves):
- 1 dozen large boiled eggs -- peeled and chilled
- 24 medium boiled shrimp -- approx. 1 pound -- peeled and deveined
- 1/2 cup 0% plain Greek yogurt
- 2 TBS grainy mustard
- 2 tsp. hot sauce [NOTE: I use Crystal]
- 1 tsp. Cajun seasoning blend + more for garnish
- 1/3 cup thinly sliced scallions
- 1/3 cup finely minced celery
Directions:
Step 1: Cut boiled eggs in half, and place the whites in the wells of a deviled egg serving platter. Place egg yolks in a mixing bowl -- along with the Greek yogurt, Creole mustard, hot sauce, and Creole seasoning. Use a fork to mash egg yolks into the other ingredients to make a slightly chunky filling.
Step 2: Add sliced scallion and celery to the filling, and stir to evenly incorporate. Spoon filling into a plastic ziptop bag -- make sure to remove all air. Snip corner off bag and carefully pipe an even amount of filling into the well of each egg white.
Step 3: Top each deviled egg half with a boiled shrimp, then lightly sprinkle with a bit of additional Creole seasoning. Serve immediately...or cover loosely with plastic wrap and store in the fridge until you're ready to serve.
Y'all...these Shrimp Remoulade Deviled Eggs are a total flavor BOMB! The filling is definitely on the spicy side, so feel free to reduce the amount of hot sauce if you prefer your food a bit milder. The boiled shrimp provide a nice cooling effect, though. The fat free Greek yogurt keeps the filling super creamy without the fat and calories of mayonnaise...and it provides a nice bit of tang. I guarantee you'll never miss the mayonnaise!
This appetizer is has tons of healthy protein...and less fat, carbs, and calories. Deviled eggs are always popular with my family and friends...and these upgraded deviled eggs are always eagerly eaten when I serve them. I hope you'll give them a try during the NFL playoff and Super Bowl season!
